One of my most memorable meals was in a small town named Urgup, in
Cappadocia,
Turkey. We were just wandering the town centre and came across an impressive display of earthenware pots sealed with dough and baked in a woodfire oven. Curiosity got the better of us so we sat and ordered one of these as well as a Turkish pizza. Once the dough seal was cracked open, the lid came off and revealed a delicious stew of meat and beans in a rich tomato-based broth. Perfect with the crispy bread to sop up the juices.
