No you’re not experiencing déjà vu, I’ve just decided to post up another pizza bake we had recently, only this time using another dough recipe. It’s not better, it’s not worse, it’s just breadier!

dough recipe

makes two pizzas

ingredients

 
 

  • 200 g strong flour
  • half a 7 g sachet yeast
  • 150 ml luke warm water
  • 1 tsp sugar
  • 100 g soft flour
  • salt
  • olive oil

method

 

 Mix the first four ingredients together to form a sticky batter, cover with plastic wrap and let stand in a warm place for 1 hour.

Add the 100 g soft flour, a good pinch of salt and a light drizzle of olive oil. Knead well and place into a greased bowl, cover with plastic wrap and let sit for 15 minutes.
 
Divide dough into two and roll out for your pizza bases. Don’t forget to sprinkle polenta over the pizza pan before putting the dough onto it, as well as more polenta on the outer edge of the dough for a nice crunch!

I was about to write about pizza as well. I put prosciutto on the last one – it was too salty. Next time, I will do what my grandmother used to do with bacon back in the 1930s – soak it in water to get some of the salt out!

I have a book called “Dough”, which is excellent for all things bread. The author is fanatical about weighing all ingredients to the nearest gram – including the water. Precise quantities make it easier to get the dough right.

Trick I have discovered with our useless domestic oven: after turning it up to 11 and leaving it on for half an hour, I put a bare base on a pizza stone and give it 3 minutes in the oven. That gives it a nice crunchiness on top and bottom. Then I pull it out and quickly slap the (few) toppings on. Works well.

the pizza looks absolutely delicious. we’re not that confidant to make our own dough, but used some lavash bread instead

Pizza looks fantastic, I’ve been meaning to try a home-baked pizza but I’m doubtful that my oven is trustworthy. I do have a good pizza base recipe which uses semolina as well as strong flour; I think it’s originally a Jamie Oliver recipe.

Home-made pizza is the best, isn’t it? I like the look od yours! The dough is thin.

Your Pizza looks great! I have taken a break from making pizza at home. I never seem to get the dough right!
