Potatoes can get a little boring sometimes so I like to rev them up a bit with some other ingredients, albeit, unhealthy ones. Try this easy recipe next time you’re stuck for ideas.
baked potato in mustard cream

ingredients
- 3 medium (unpeeled) potatoes, diced
- 200 ml cream
- 2 shallots, chopped
- 1 small red onion, finely sliced
- salt & freshly ground black pepper
- 1/4 cup parmesan, grated
- 1/2 cup matured cheddar, grated
- 1 tbsp seeded mustard
- 1 tbsp fresh sage, chopped
method
- Preheat oven 210°C.
- Combine all ingredients and place in a greased oven-proof dish.
- Bake for 1/2 an hour or until golden.
- Eat hot or at room temperature.
- Enjoy.

Ok maybe not the healthiest way to eat potatoes but definitely a tasty one. I think a little bacon may make this even better.
