Potatoes can get a little boring sometimes so I like to rev them up a bit with some other ingredients, albeit, unhealthy ones. Try this easy recipe next time you’re stuck for ideas.

ingredients

  • 3 medium (unpeeled) potatoes, diced
  • 200 ml cream
  • 2 shallots, chopped
  • 1 small red onion, finely sliced
  • salt & freshly ground black pepper
  • 1/4 cup parmesan, grated
  • 1/2 cup matured cheddar, grated
  • 1 tbsp seeded mustard
  • 1 tbsp fresh sage, chopped

method

  1. Preheat oven 210°C.
  2. Combine all ingredients and place in a greased oven-proof dish.
  3. Bake for 1/2 an hour or until golden.
  4. Eat hot or at room temperature.
  5. Enjoy.

oh yum. seems like an easy and tasty recipe. although the calorie devil will enjoy this one too ;-)

Ok maybe not the healthiest way to eat potatoes but definitely a tasty one. I think a little bacon may make this even better.
