  1. Toast the cumin seeds, pimento and dried chilli in a dry pan over medium heat. As soon as you smell the spice, remove from heat to prevent burning. Allow to cool for a minute then grind to a powder in a mortar. Alternatively, use a spice grinder.
  2. Combine the ground cumin, pimento and remaining ingredients in a small mixing bowl. Store in a glass jar in the spice cupboard, out of direct light.
Recipe Notes

I used a Mexican oregano given to me by a friend that lives not all that far from the American/Mexican border. The dried leaves of this native oregano that grows in the Chihuahuan desert are similar to the regular variety, but they have a certain “something” that sets it apart.
