One of the simplest of sauces has to be basil pesto.
Several ingredients + very little effort = a very tasty result.
Once upon a time I made mine in a food processor, but I now prefer to use a mortar and pestle for a more rustic texture. Every cook has their own version and method, so here’s mine.
makes approximately 1 cup
Pick the leaves from the bunches of basil and place them into a mortar. Add the pine nuts, parmesan and a pinch of salt. Using the pestle, pound the ingredients until a paste forms, adding the olive oil until smooth. Add more seasoning, to taste.
