
Blackened Salmon Tacos with Pineapple Mango Salsa
A delicious flavor combination that will leave you wanting more!
Ingredients
Taco Ingredients
- 1 pound Salmon
- 8 Tortillas Corn tortillas, flour tortillas, or taco shells
- 1 tbsp Cajun spice
- 1 Salt To taste
- 1 Fresh black pepper To taste
- 2 tbsp Olive oil
Pineapple and Mango Salsa Ingredients
- 2 Mangos Peeled and diced
- 1 Pineapple Outer part removed, cored, and cut into pieces
- 1 Jalapeno Pepper Seeds removed, and pepper sliced
- 1 Red pepper Seeded and diced
- 1 Red onion Diced
- 1/2 cup Fresh cilantro
- 1/4 cup Fresh lime juice 2 Limes
Instructions
- Pat the salmon filets dry and season the salmon on both sides using salt and pepper, and your choice of seasoning — Cajun or homemade seasoning
- Heat the olive oil in a large skillet over medium heat and carefully place the salmon in the skillet
- Cook the salmon until it presents a deep golden brown color — which takes roughly 5 or 6 minutes — then flip and cook the other side
- Remove from the skillet and set on a plate to cool slightly
- Using a fork, flake the salmon into pieces
- Make the pineapple mango salsa by preparing all the ingredients and placing them into a bowl
- Drizzle with the lime juice and stir to combine
- Heat your flour tortillas or corn tortillas slightly
- Place a serving of blackened salmon into the center of the tortilla and place a heaping spoon of salsa over the salmon
- Enjoy!
Notes
You can make Cajun spice at home if you don’t have it readily available. Use ½ teaspoon each of salt, garlic powder, onion powder, paprika, and dried oregano. Then add ¼ teaspoon of Cayenne pepper. (If you want more of a bite, use more cayenne pepper.)
