Blackened Salmon Tacos with Pineapple Mango Salsa

Taco Ingredients

  • 1 pound Salmon
  • 8 Tortillas Corn tortillas, flour tortillas, or taco shells
  • 1 tbsp Cajun spice
  • 1 Salt To taste
  • 1 Fresh black pepper To taste
  • 2 tbsp Olive oil

Pineapple and Mango Salsa Ingredients

  • 2 Mangos Peeled and diced
  • 1 Pineapple Outer part removed, cored, and cut into pieces
  • 1 Jalapeno Pepper Seeds removed, and pepper sliced
  • 1 Red pepper Seeded and diced
  • 1 Red onion Diced
  • 1/2 cup Fresh cilantro
  • 1/4 cup Fresh lime juice 2 Limes


  • Pat the salmon filets dry and season the salmon on both sides using salt and pepper, and your choice of seasoning — Cajun or homemade seasoning
  • Heat the olive oil in a large skillet over medium heat and carefully place the salmon in the skillet
  • Cook the salmon until it presents a deep golden brown color — which takes roughly 5 or 6 minutes — then flip and cook the other side
  • Remove from the skillet and set on a plate to cool slightly
  • Using a fork, flake the salmon into pieces
  • Make the pineapple mango salsa by preparing all the ingredients and placing them into a bowl
  • Drizzle with the lime juice and stir to combine
  • Heat your flour tortillas or corn tortillas slightly
  • Place a serving of blackened salmon into the center of the tortilla and place a heaping spoon of salsa over the salmon
  • Enjoy!


You can make Cajun spice at home if you don’t have it readily available. Use ½ teaspoon each of salt, garlic powder, onion powder, paprika, and dried oregano. Then add ¼ teaspoon of Cayenne pepper. (If you want more of a bite, use more cayenne pepper.)
