Ingredients
  

Shrimp Taco Ingredients

  • 1 pound shrimp peeled and deveined, tails removed
  • 8 tortillas corn tortillas, flour tortillas, or taco shells
  • 2 teaspoons olive oil
  • 1 cup onions sliced super thin
  • 4 ounces cream cheese softened
  • 2 tablespoons milk
  • 1 tablespoon taco seasoning
  • Juice from 1 lime
  • 2 tablespoons freshly chopped cilantro
  • ½ cup shredded purple cabbage
  • ¼ cup shredded radishes
  • 1 cup Mexican-style shredded cheese

Instructions
 

  • Heat the oil in a skillet, then add in the onion and sauté for 5 minutes
  • Add the shrimp and sauté for 3 to 4 minutes, until the shrimp turn pink, stirring frequently
  • In a bowl combine the softened cream cheese, milk, and taco seasoning, and stir well to combine
  • Stir continuously until the cream cheese is all melted
  • Add to the skillet with the shrimp and onions and stir well
  • Warm up the tortillas
  • Spoon the shrimp mixture into the corn tortilla shell, then add your choice of the remaining toppings
  • Enjoy!
